Today is Day 2 of my Raw Vegan Experiment. I follow Fully Raw Kristina and one of her recipes are Zucchini “Pasta” . I saw how easy it was to peel some zucchinis and make tomato sauce so I thought, “Hey! Why not give this a shot!” Plus it’s an inexpensive meal. With the ingredients used, it would cost me $7.
After eating this raw meal, I felt energy running through my body. It seemed as if every part of my blood vessel was triggered. I felt…good! Refreshed! If you’ve been persuaded by the picture above, feel free to give this recipe a try!

Time: 1 hour
- 4 zucchinis
- 1 small pack of mushrooms
- 3 tomato cluster
- 1 yellow onion
- 1 garlic clover
- 1 parsley batch
- 1 green onion batch
- 1 lemon
- sundried tomatoes
- distilled white vinegar (for cleaning)
- Julienne Peeler or Spiralizer
Step #1 – Clean Vegetables Thoroughly
Make sure you clean all of your vegetables with warm water and a cap of vinegar to remove all germs. When eating raw, your food is uncooked which can increase the chances of getting food poisoning if your food is not cleaned well enough.
Step #2 – Cut, peal, and season
Peel your zucchini and slice your mushrooms. Add your choice of herbal seasoning on top. I used thyme.
Step #3 – create tomato sauce
- 3 tomatoes
- 1/2 small zucchini
- 4 stems of parsley
- 2 stems of green onion
- 1/4 of yellow onion
- 2 garlic cloves
- 2 hand fulls of sundried tomatos
- 1 lemon squeezed
Blend all together.
Step #4 – Top tomato sauce on zucchetti and enjoy! 🙂
