Veggie Balls w. Baked Potato Sticks

Time:
Veggie Balls – 30 min prep, 15-20 min bake
Potato Sticks – 5 min prep, 45 min bake

Veggie Balls Ingredients & Instructions :

  • 2 can black beans
  • 4 Garlic Cloves
  • 1/2 Onion
  • Chopped Kale
  • Baby carrots
  • 1 Bell Pepper
  • Herbal Seasonings
  • 1/4 cup Flax Seed, 1/4 cup water
  1. Combine rice/Quinoa, black beans, Kale, bell peppers, carrots, onion, garlic, Flax seed, and vegetable broth in a separate bowl.
  2. Stir together until sticky.
  3. Form balls with your hands and place on a sprayed foiled pan.
  4. When finished, place in the oven at 400 degrees for 30 min.

Potato Sticks Ingredients & Instructions
1 Russet Potato
Olive Oil
Kosher Salt & Ground Pepper
Herbal Seasonings: Basil, Parsley, Oregano

  • Slice potato in small slices then place in a bowl
  • Drizzle (not drown) olive oil onto potatoes
  • Season potatoes with seasonings
  • Spray cooking sheet or foil with cooking spray
  • Place potatoes on metal cooking sheet
  • Bake on 450 degrees for 45 min. or until golden
