Time: 1 hr 15 min
- Red Beans
- Yellow squash
- Red & green peppers
- Vegetable broth
- Choice of seasonings (Cumin, basil, cilantro, oregano)
1. Chop up all of your vegetables and herbs first!
2. In a LARGE POT, saute onions, garlic, red and green peppers, squash, zucchini together. Season with your choice of seasoning. Saute until veggies are tender.
3. Add Vegetable broth, beans, celery, potatoes, tomatoes, kale, carrots.
4. Bring to a boil. Then let simmer for approx. 30 min.
