Vegan Oat Cakes


Can I just say that these oat cakes looks bomb-diggity?! 🤗 They also tasted pretty great as well! My roommate gave me the recipe she received from one of her co-workers. I gave it a try and then BAM! This 👆🏾 happened! I went all out to add some glazed peaches and apples to the plate so that the Oat Cakes had a sweet taste to it. I am on a vegan fast at the moment and I am trying every way to get creative in the kitchen again. It’s been a while since I’ve posted a homemade meal. Honestly, I haven’t had much of a desire to get creative in the kitchen, nor have I been focusing on it. However, I am slowly getting back into the groove of things in the kitchen. So, I had to start back with a bang! 😄 Keep on scrolling to see this awesome recipe.

Servings: 2

Grocery List: 

  • Whole Oats
  • 1 Banana
  • 4 small peaches
  • 1 apple
  • Flax Seed
  • Pink Himalayan Salt
  • Baking Powder
  • Cinnamon
  • Agave Nectar
  • Almond Extract
  • Almond Milk (optional)
  • Coconut Oil Pan Spray (or coconut oil)




Step #1: Create Flax “Egg”

Add 3-4 tablespoons of flax seed with water. Remember to not use too much water or else the flax will not stick together.



Step #2: Blend 2 cups of Oats and Season

Blend and then season as desired.


  • 2 cups of oats
  • A pinch of Pink Himalayan Salt
  • 1/4 tsp of baking powder
  • 1/2 tsp of cinnamon
  • 1 tsp of almond extract




Step #3: Banana Mash 🍌

Thinnly cut 1 ripe banana into a bowl and mash with a fork.




Step #4: Combine Ingredients  🍑

Combine all ingredients (flax “egg”, banana mash, and 1 small peach). Add 1/2 cup of water. Texture should be soft consistency. Slowly add water if needed.

Step #5: Add to the pan

Scoop your Oat Cakes onto a skillet at medium temperature. Flip when edges get brown or after 1 min.



Step #6: Add apples and peaches to skillet with Coconut Pan Spray (or coconut oil)
