Vegan Fiesta Night

I must say that this dinner blowed my mind away. I did not expect it to turn out so flavorful! This was a day where my church fasted from sun up to sun down. I think that maybe since we were so hungry this meal turned out to be so fascinating. I found a similar dish as this one online – Crockpot Mexican Quinoa. I just added my own fix to it of course. It was SO GOOD. I felt like I was on a high because my friends and I could not stop laughing.

If you’re looking to make a quick, fun, and flavorful meal, you should try my Vegan Feista Night meal! Below is the recipe.
