Vegan Fiesta Night


I must say that this dinner blowed my mind away. I did not expect it to turn out so flavorful! This was a day where my church fasted from sun up to sun down. I think that maybe since we were so hungry this meal turned out to be so fascinating. I found a similar dish as this one online – Crockpot Mexican Quinoa. I just added my own fix to it of course. It was SO GOOD. I felt like I was on a high because my friends and I could not stop laughing.

Time: prep 30 min, cook 30 min

Servings: 10

Grocery List:

  • Gluten Free Small Corn Tortillas
  • Couscous
  • 2 cans Organic Black Beans
  • Olive oil or coconut oil
  • Medium jar of fresh organic Salsa
  • Vegetable broth
  • 1 large Red Bell Pepper
  • 1 large green bell pepper
  • 2 Red Vine Tomatoes
  • Shredded carrots
  • Purple onion
  • 2 large yellow corn stalks
  • 2 plantains
  • 2 Hass Avocados
  • Garlic
  • Small Ginger root
  • Fresh Basil Leaves
  • Fresh parsley
  • 2 lime

Step #1

Ingredients #1:

  • Both green and red bell peppers
  • Half purple onion
  • 2 corn stalks
  • 2 Tomatoes
  • 3 garlic cloves
  • Minced ginger root
  • 1 1/2 cup couscous
  • 1 1/2 cup vegetable broth
  • Olive oil
  • Herbal Seasonings: dried oregano, parsley, Mediterranean seasoning
  • Spices: Cumin, paprika


  • Chop up all vegetables into small pieces
  • In a large non-stick skillet or large pan, add vegetables, couscous, vegetable broth, and drizzle olive oil.
  • Cook on medium heat
  • Stir and add spices over time
  • Turn to low when pan is fully heated

In the mean time….

  • Slice plantains and fry with coconut oil. Season as you like. I add a bit of cinnamon and honey to my pan.

Step #2

While everything is cooking…start on Basil Pesto Sauce

Ingredients #2:

  • 2 Hass Avocadoes (ripened)
  • 3 garlic cloves
  • 10 Basil leaves
  • 3 tbs olive oil
  • 1 lime
  • Herbal Seasonings: dried parsley


  • Slice avocadoes, garlic, and Basil leaves.
  • Add everything to food processor.
  • Drizzle lime on top
  • Blend together

Step #3

Next, heat up up the Tortillas over med-low heat with coconut oil.

Step #4 – Serve and enjoy!

End result…

Don’t forget your shredded carrots, parsley, salsa, and lime to drizzle on top!
