Vegan Apple Cinnamon Pancakes


I’d love to share with you how much this breakfast has sparked my morning. It was made with such love, joy, and peace…*sigh… Just looking at the picture makes me want to cook it all over again. These Vegan Apple Cinnamon Pancakes will do you good on one of your off days from work. Spend the day writing, reading, meditating, or serving somewhere. It’s the perfect kick to your morning and should last you throughout your day. Give this a try with a nice hot cup of your favorite coffee or tea! The recipe is below.

 

Time: Prep: 20, Cook: 30 min

Servings: 2-3

Grocery List:

  • Wheat Flour or Gluten Free Flour
  • Baking Powder
  • Salt
  • Cinnamon
  • Allspice
  • Brown Sugar
  • Pecan Meal (optional)
  • Flaxseed
  • Almond Milk
  • Apply Cider Vinegar
  • Light Agave Nectar
  • Coconut Oil

 

Step #1 – Prep Dry and Wet Ingredients

Ingredients:

  • 1 1/2 cup flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp allspice
  • 2 tbsp. brown sugar
  • 3 tbsp. pecan meal

 

Step #2 – Combine Wet Ingredients with Dry Ingredients

Ingredients:

  • 1 cup almond milk
  • 1 tbsp. apple cider vinegar
  • 1 tbsp. almond extract
  • 2 tbsp. flax seed
  • 2 tbsp. light agave nectar
  • 1 tsp coconut oil

 

Step #3 – Cook pancakes

Oil pan lightly with coconut oil. The edges should be puffed up, then flip over. This should only take 1 min for each pancake.

Step #4 – Make apple cinnamon

Slice a fresh apple. Oil pan with about 1 tsp of coconut oil. Place apple slices in the pan and coat with cinnamon. Flip over on each side. Place on top of pancakes. Enjoy with cranberries and maple syrup. (I did not have any syrup so I topped these with light agave nectar).

Don’t forget your cup of tea! This is my favorite concoction put together. It sooths my stomach and warms my body. Boil hot water on the stove with ginger, mint leaves, and a sliced lemon.
