Purple Cabbage Bowls


This meal goes well when served as a finger-food for a gathering. I had a prayer/worship night with a few friends and they all enjoyed the combinations of food my roommate and I served.

Time: 30 min

Servings: 5-10

Grocery List:

  • Purple Cabbage
  • Couscous
  • Quinoa
  • Kale
  • Red Lettuce
  • 3 Roma Tomatoes
  • 3 Corn Stalks
  • Shredded carrots
  • 1 large cucumber
  • 1 green and red bell pepper
  • Fresh Basil leaves
  • Fresh Mint leaves
  • Tahini Goodness Dressing (from Aldi; or your favorite dressing)


Step #1 – Cook Couscous and Quinoa

I prepped my couscous and quinoa earlier in the day so that it could cool down. I like mine at a cool temperature. It helps my food taste refreshing.

Step #2 – Prep Veggies 

Make sure your veggies are well clean and chopped as necessary.




Step #3 – Place Veggies in bowl and mix with dressing


  • corn
  • shredded carrots
  • green and red bell pepper
  • cucumber
  • kale
  • red leaf lettuce
  • basil
  • mint
  • tomato
  • tahini goodness dressing



Step #4 – Top Cabbage Bowl with Couscous and Quinoa



Step #5 – Serve and enjoy! 🙂
