Simple and Sweet Salad


This morning was one of those “get into shape” mornings. I felt like having a breezy day by reviving myself with fresh veggies, fruit, exercise, and a relaxed evening on the beach. I woke up this morning with heavy weight on my mind and I refused to ponder on the circumstances going on in my life. So I decided to puff up the determination to do my work out routine, listen to gospel music, explore new art, and take it easy.

I keep reminding myself that God is faithful and he WILL come through just in time. He has everything in His hands. He knows what is best for me. He will never forsaken His children. So I should not stress myself out with worries and doubts. Stand on His word and He will give you peace and strength to get through your battles. Isaiah 41:13 says, “For I hold you by your right hand – I the Lord your God. And I say to you, ‘Do not be afraid. I am here to help you.'” That is what is hidden in my heart, I believe it, and therefore I will stand firm with what God tells me. This too shall pass in Jesus’ name! Yesterday’s mistakes are OVER. So say hello to this sunshing beautiful day!

After I worked out I didn’t eat for about an hour. I’m trying to save my appetite to indulge into a large Publix Veggie Sandwich later on so I’ve decided to have a Fugi Apple, 2 Large Carrot Sticks, and this Simple and Sweet Salad. At first I said, “Well maybe I should just eat one whole batch of romaine lettuce.” LOL. But then I decided to whip up a salad with what I had left over in the fridge. I even made my own Oregano & Basil Salad Dressing. It may not be the BEST Salad, but I’m working with what I have in stock and also to preserve my body for a free flowing evening on the beach later on.

Simple and Sweet Salad

Great for fasting

Time: Prep 5 min

Grocery List:

  • Romaine Lettuce
  • Shredded Carrots
  • Avocado
  • Dried Oregano
  • Dried Basil
  • Salt
  • Lime Juice
  • Grapeseed Oil or Olive Oil
  • Tahini Goodness Salad Dress (or similar)

Salad Ingredients:

  • Romaine Lettuce
  • Shredded Carrots
  • Avocado

Oregano & Basil Dressing Ingredients:

  • 1 tbs Dried Oregano
  • 1 tbs Dried Basil
  • Pinch of Salt
  • 1 tsp Lime Juice
  • 2-3 tbs Grapeseed Oil or Olive Oil

Directions:

  • In a small bowl, pour oregano and basil dressing ingredients together. Whisk with a fork.
  • Pour on top of salad

SN: I added Tahini Goodness Dressing for extra flavor (it’s one of my favorites).
