Raw Sushi Rolls

Grocery List:

  • Small Nori (30 sheet pack)
  • 1 Broccoli Head
  • Sliced carrots
  • 1 Cucumber
  • 1 Red bell pepper
  • 1 Avocado
  • 1 Parsley batch
  • 2 Pitted dates
  • Chia seeds
  • Julienne peeler
  • Food processor (or blender)


Step #1 – slice your vegetables

Cut red bell pepper in long strips. Use a julienne peeler for cucumber strips. Slice avocado into tiny long strips. Soak parsley in a bowl of warm water with vinegar. Cut broccoli into small pieces. Add to food processor with sliced pitted dates.


Step #2 – place vegetables on nori sheets

Broccoli and dates should be in shredded pieces (like sticky rice). Place a small amount of broccoli rice onto the edge of nori sheet (approx. 1 tsp.)

Align 1 red bell pepper, 1 sliced carrot, a few cucumber strips, 1 thin sliced avocado, and parsley. Wet the opposite edge of the nori sheet and roll.


Step 3 – serve and enjoy!

If you have any broccoli rice left over, add to the bottom on the dish. Use the rest of your ingredients to decorate your dish. Don’t forget to sprinkle some chia seeds on top!
