Playing with Plantains

Grocery List:

  • 1 can of garbanzo beans
  • 1 red bell pepper
  • fresh parsley
  • shredded carrots
  • green leaf lettuce
  • 3 roma tomatos
  • 1 green onion stalk
  • 1 cucumber
  • 2 corn stalks
  • garlic
  • unbaked tortillas OR spinach wraps
  • olive oil
  • curry powder
  • food processor (or use a spoon and bowl to mass together)

Step #1: Create Garbanzo Hummus

Ingredients:

  • Cooked garbanzo beans
  • red bell pepper
  • green onion
  • parsley
  • garlic
  • 2 tbsp olive oil

Step #2 – Create wrap as desired

Ingredients:

  • tomatos
  • cucumber
  • corn
  • carrots
  • green onion
  • parsley
  • lettuce
  • curry powder

Step #3 – Enjoy with baked tortillas

I just placed the unbaked tortillas in the oven on 350 degrees for about 10 minutes or until they were hard enough like chips. Topped with salt before baking.

 

 

 

I pretty much did the same with this dish as well.
