Plant Strong Burgers


Time: 30 min prep, 15-20 bake

Side Ingredients:

  • Spinach
  • Spring Mix
  • Roma Tomato (1)
  • Hamburger Buns
  • Original Hummus

Patty Ingredients:

  • Black Beans (2 cups cooked)
  • Brown Rice (1 cup)
  • Vegetables: carrots, onion, red pepper, green pepper
  • Spices (1/4 tsp or small mixture): garlic salt, basil, oregano, cayenne, thyme, cumin, black pepper, curry powder, salt
  • Liquid (1/2 cup): veggie broth and bean liquid
  • Flax Seed

Directions:

  • Heat oven to 360 degrees
  • Mash cooked beans in a bowl
  • Add cooked rice to bowl
  • Add vegetables
  • Add spices
  • Add liquid
  • Add flax seed
  • Mix everything with a spoon or bare hands. IF TOO SOGGY, add more rice and flax seeds. IF TOO FIRM, add liquid.
  • Form patties and place on cooking sheet
  • Bake for 15-20 minutes; until crispy. Flip half way through

Layer sandwich:

Bottom Bun –> Hummus Spread –> Spring Mix –> Patty –>Spinach –> Hummus Spread –> Top Bun
