Sweet Potato Kale Stir Fry

This is by far the best put-together meal I’ve made. One day I had to empty the fridge and all I had left over was kale, lentils, onion, and garlic. After tasting the goodness of that meal, I decided to add my own kick to it. This is very easy and convenient for a holiday meal.
Servings: Veggie Balls – 6, Sweet Potato Kale Stir Fry 4

Time: 1 – 2 hours

Grocery List:

  • 1 batch Kale
  • 1 onion
  • Mushrooms
  • 1 whole Garlic
  • 1 belles pepper
  • 2 regular sweet potatoes
  • 1/2 batch cilantro
  • 1 bag lentils
  • 2 cans black beans
  • 1 bag Quinoa
  • 1 bag brown rice
  • Vegetable Broth
  • Olive oil
  • Coconut oil
  • Sea Salt
  • Cinnamon
  • Crushed Black Pepper
  • Herbal Seasonings: dried oregano, dried basil leaves, ground cumin, mediteranean
  • Flax Seeds

Ingredients/Instructions:

First and foremost, chop and clean ALL vegetables before or while rice and beans are boiling.

Lentils

  • 1 bag lentils
  • Cilantro
  • Diced Onion
  • 3 Minced Garlic Cloves
  • Herbal Seasonings
  1. Rinse Lentils and drain.
  2. Add to a pot with all ingredients combined on med-high heat.
  3. When boiling, add herbal Seasonings and bring heat to low.
  4. Set aside for Stir Fry.

Brown Rice and Quinoa

  • 1 cup Brown Rice
  • 1 cup Quinoa
  • 2 cup water
  • 2 cup vegetable broth
  • 1 tbsp salt
  • Herbal Seasonings
  1. Boil rice and Quinoa together with all ingredients
  2. Fluff when finished

Black Beans

  1. Drain and rinse before cooking
  2. Add to a pot with fresh water
  3. Add cilantro and Seasonings
  4. Cool on med-high heat
  5. When soft enough, mash beans for creamy consistency.

Veggie Balls

  • 2 can black beans
  • 4 Garlic Cloves
  • 1/2 Onion
  • Chopped Kale
  • Baby carrots
  • 1 Bell Pepper
  • Herbal Seasonings
  • 1/4 cup Flax Seed, 1/4 cup water
  1. Combine rice/Quinoa, black beans, Kale, bell peppers, carrots, onion, garlic, Flax seed, and vegetable broth in a separate bowl.
  2. Stir together until sticky.
  3. Form balls with your hands and place on a sprayed foiled pan.
  4. When finished, place in the oven at 400 degrees for 30 min.

Sweet Potato Kale Stir Fry

  • Kale
  • Onion
  • Cilantro
  • Mushrooms
  • Lentils
  • Sweet Potatoes
  • Cinnamon
  • Herbal Seasonings
  • Salt
  • Pepper
  • 2 tbsp olive oil
  • 2 tbsp Coconut Oil
  1. Add coconut oil to pan on med-high heat.
  2. Add sweet potatoes, mushroom, Kale, and onion to pan.
  3. Drizzle olive oil on top and cover pot for 5 min. Stir occasionally.
  4. When kale is near soft, add lentils. Stir together and reduce heat.
