Cranberry Kale Salad

This year for Thanksgiving, I decided to be different. Instead of cooking a meal like everyone else, I chose to bring a fresh and lightweight dish to lighten up from the heavy foods. My Cranberry Kale Salad added a refreshing taste to the table. It brought my family down to Earth again. What makes a Kale Salad perfect with any meal is that Kale is a thick leafy vegetable that does the body great works. It helps regulate the body and it settles the appetite. 

If you’re like me and you like to get refreshed after eating a heavy meal for the past 3 days after Thanksgiving, lighten up and renew your body with this Cranberry Kale Salad. You can have it for breakfast, lunch, and dinner if you like. Have it with a side of plantains. This salad has plenty of easy to find ingredients that fits perfectly into your budget. Believe it or not, this entire dish rounded to about $7. Yes! Healthy food is not always expensive! I bought everything from my local Farmer’s Market. Grocery List:

  • 1 large batch of Kale
  • Baby carrots
  • Cranberries
  • Cucumber
  • Purple Onion
  • 1 zuchinni
  • 1 squash
  • 2 Roma Tomatoes
  • Dried Thyme
  • Favorite Salad Dressing (I have a natural Greek Dressing)

Instructions:

  • Chop all ingredients 
  • Sprinkle Thyme on top
  • Toss with salad dressing

Serve and enjoy!
