This is a brain invigorating dish to restart your week. Very nutritious and refreshing. I looked in the fridge and didn’t know what the heck to put together. I just started chopping up veggies and tried to be creative. Then walah! This happened. Because of the mixture of ingredients, this will get your body back into regulation for sure.
Time: 15 min
- yellow bell pepper
- green bell pepper
- kale (if desired)
- 1 small broccoli crown (size of two hands)
- 1 onion
- 2 roma tomatos
- 1 jalapeño pepper
- lemon or lemon juice
- Food processor or blender
- 1/2 handful of chopped onion
- 3 cloves of garlic
- diced tomatoes
- tiny bits of half of jalapeño pepper
- handful of parsley
- squeezed lemon
Step #1 – Clean all veggies and chop
Make sure that all vegetables are cleaned thoroughly.
Chop broccoli into bite size pieces then place in food processor. Add to a bowl.
Chop onion and place into food processor. Add to bowl with shredded broccoli.
Dice tomatoes, jalapeño pepper, and parsley. Add to bowl with other ingredients.
Step #2 – Mix and Style
Mix ingredients in bowl. Place on top of cucumber slices.
Add yellow bell pepper, green bell pepper, and kale to plate to style.
Drizzle olive oil on top.
Step #3 – Serve and enjoy! 🙂
