Black-Eyed Peas (MEATLESS)

Who says you need meat to make tasty and FRESH black-eyed peas?

Time: Black-Eyed Peas: 1 Hour 30 min., Rice and Veggies: 10 min.


  • 3 Cups of Bagged Peas
  • Honey
  • Basil Leaves (2)
  • Season Salt
  • Cumin
  • Complete Seasoning
  • Onion
  • Garlic
  • 3 Cups of Vegetable Broth
  • Black Pepper
  • Oregano
  • Red Wine Vinegar
  • 3 Cups of Water
  • Green and Red Pepper
  • 1 Roma Tomato
  • Jasmine Rice


Black-Eyed Peas

  • Soak peas over night. Rinse, drain, and place in a large pot
  • Add 3 cups of water and 3 cups of vegetable broth
  • Add onions, garlic, herbs (bay leaves)
  • Bring to a boil for 30 min.
  • Add 2.5 tbs of honey
  • Simmer of low for 1 hour
  • Add seasonings
  • Simmer for 15-30 min.

Rice and Veggies

  • Cook rice while beans are simmering
  • Steam chopped red and green pepper, tomato, garlic, and onion
  • Add other seasonings of choice
  • Serve and enjoy!
