Ah-Mazing Sweet Potato w/ Veggies and Quinoa!

Great for fasting!

Ingredients:
– Asparagus
– Quinoa
– Squash
– Sweet Potato
– Purple Onion
– Minced Garlic
– Red and Green Bell Peppers
– Olive Oil

Directions:
– Rub olive oil on sweet potato, rap in foil, bake in oven at 400 degrees F for 30-45 min
– Chop red and green peppers, onion, and garlic
– Cook quinoa
– Saute all veggies in nonstick skillet with 1 tbs Olive Oil
– Once finished, serve and enjoy!
