I am having way too much fun with Raw Vegan eating. Today is Day 4 and I am on Raw Dinner Dish #2. I have felt very invigorating today. I am also gaining discipline. Every time I eat a fresh meal I sense a touch on the middle of my forehead that makes me feel enlightened. Somehow, I get this feel of electricity running through my body also.
Please, join me on this journey of my Raw Vegan Experiment. If you have to urge to crank your diet up a notch, come along. You may wonder, “How do you stand when you crave for the foods you used to eat.” I’d say, “Just say no way, no-thank-you, or MOVING FORWARD.” Today, I faced no temptation with eating sweets. My job had a table full of snacks and chocolate that I love and I passed right by it. A customer handed me a Kit-Kat Mint (lord knows I love Kit-Kats lol) and I gave it to my co-worker. Then, I went to my Toastmasters meeting and they had a red velvet cake, donuts, and other sweets that I denied. Two people asked me if I would like a piece of cake and I told them no-thank-you. With all of that said, I think it’s safe to say that I am confident in my Raw Vegan Experiment.
This recipe is fun, quick, and oh-so delicious. You will run back to the kitchen for more. Check out the recipe below and have fun!
Time: 1 hour
Servings: 4-6 (varies with batch of turnip greens)
- 1 batch of turnip greens
- 1 batch of carrots
- 1 red bell pepper
- 1 green bell pepper
- 1 cucumber
- 1 yellow onion
- 1 garlic clover
- 1 zucchini
- 1 avocado
- 1 tomato
- tahini goodness dressing (found at Alid). Or any dressing of your desire.

Step #1 – cook couscous
I actually cooked my couscous in the morning and placed it in the fridge so that I could have this dish close to raw as possible. However, you can use the couscous right off of the stove, but allow it to col down.
Step #2 – clean all vegetables
Make sure your turnip greens, cucumber, bell peppers, and zucchini are well cleaned. Lay turnip greens out when dry and allow to wilt. I had my turnip greens for about 4 days and they wilted in the fridge. This made it easier for them to roll.
Step #3 – chop and mix
Dice 1/4th of an onion, 2 garlic cloves, bell peppers, cucumber, and zucchini. Mix it in with the couscous.
Step #4 – dress up
Lay out turnip greens on a chopping board. Place Tahini Goodness dressing on the leaf (covering the entire leaf helps the leaf stick together when wrapping up). Place couscous mixture on top. Roll to perfection. If the wraps do not stay, use a toothpick.
Step #5 – finishing touch
Slice avocado, Julienne peel carrots, dice tomato, and add fresh herbs on top. Serve and enjoy! 🙂
